But our commitment to Australian tourism is as strong as ever.

From $245
Drive through Hazards Vineyard where wallabies graze among the vines, then arrive at Moulting Lagoon for oyster shucking from the back of a ute. Pair fresh Freycinet oysters with Resolution Riesling and Sparkling Cuvée as mist drifts across the water. Head underground to Devil's Den where lunch from Devil's Kitchen awaits – local seasonal produce matched with Devil's Corner wines. Toast s'mores over burning vine cuttings by the firepit, finishing with a guided tasting exploring complex wines.

$75
Gather around open-air fire pits as the Hazards coastline fades into the winter dark. Wrapped in woollen throws, reach for a platter of Tasmanian artisan cheese, cured meats, pickled winter vegetables and wood-fired damper with hot honey butter and native pepper berry – matched with a bottle of cool-climate Devil's Corner wine. Here, winter isn't something to escape, it's something to lean into. Available 2pm–4pm Friday to Sunday, 8–23 May.
